Description
Black mangosteen, also known as kokum black is used in Indian cooking.
The black mangosteen has been halved and dried, so that the dried seeds are visible. It’s used as a souring agent, in a similar way to tamarind.
When used in recipes, dried black mangosteen adds a peculiar flavour and deep-red colour.
It has a slighty sweet and sour aroma and a refreshing sour taste.
