Black mangosteen peel

Description

Black mangosteen, also known as kokum black is used in indian cooking.

The outer peel of the fruit is dried in the sun and used as a souring agent, in a similar way to tamarind.

When used in recipes, black mangosteen peel adds a peculiar flavour and deep-red colour.

It has a slighty sweet and sour aroma and a refreshing sour taste.
