Persimmon – dried

Description

Our dried persimmon also known as Hoshigaki persimmon is a delicacy amongst the Japanese food culture. The fruit has a caramelised sugary taste, while its texture can be described as gummy, almost like hard jelly.

The dried persimmon starts its process when still hard and on the tree, it is harvested and the shoulder cut in a circular motion leaving the top quarter of the fruit exposed while the stem remains attached. Hung with string from its stem the persimmon should be left to dry, when the fruit starts to wrinkle, although still plump, the fruit is massaged to strain its sugar content.
